Husband and wife team, Aaron and Debbie Millon, purchased the restaurant in September 2006, and offer locals and visitors one of central Vermont’s most creative and sophisticated dining experiences. Committed to supporting local farmers, Vermont agriculture, and the philosophies behind sustainable farming and organic food production, Restaurant Phoebe is a member of the Vermont Fresh Network, Slow Food USA, and a supporter of the Localvore movement.
